Stark-Condé Cabernet Sauvignon Stellenbosch 2016
Coastal Region, South Africa
Jose Conde (Owner & Wine Maker):
"We often describe ourselves as being first and foremost, a Cabernet producer, and this wine is the bedrock of our winery. We generally refer to it as our “Estate Blend” being made from our four Cabernet blocks along with the three other traditional Bordeaux blending varieties that we grow on our farm.
Since this wine is from several different blocks, the soil textures vary, but the soil type is the decomposed granite iron-rich red soils typical of Stellenbosch mountain vineyards."
The soils on the estate are decomposed granite over clay, with a range of textures from light gravel to quite stoney. Jonkershoek Valley is a small ward within Stellenbosch which shows unique characteristics. It is a high winter rainfall area: the historical average is about 47 inches, nearly double the Stellenbosch average. Jonkershoek Valley is exposed to the southeasterly winds in the summer, which help to cut down on the incidence of disease and also serves to hold down yields. Meticulous viticulture, selected harvesting, hand grape- sorting, small-batch fermentation, patient barrel maturation — these are the guiding philosophies behind the wines. The carefully-crafted wines speak with personality of a particular terroir.
Blend Varietal: 85% Cabernet Sauvignon, 8% Petit Verdot, 3% Cabernet Franc, 2% Malbec, 2% Petite Syrah
2016 was a dry year, resulting in intensely aromatic wines. The wines are boldly fruited and very plush with velvet-like tannins.
Blackberry fruit aromas with tea-leaf and cedar notes. The palate is rich and polished with dark fruit and mocha flavors and a finely balanced acidity. Long finish with the fine tannins typical of a Jonkershoek Valley wine.
